Lamb & Chickpea Stew with Couscous by Wendy Trudeau
  1. Brown meat remove from pan I take paper towel to remove fat. Wipe Clean.
  2. Add olive oil and onions and carrots stir for about 5 minutes onions should start looking translucent
  3. Add spices stir for about 30 seconds.
  4. Add broth and the rest of ingredients except for the cilantro and lemon juice.
  5. Bring to a boil to thicken when thick add cilantro and lemon juice.
  1. To make couscous I used 1/2 cup couscous and 1/2 cup boiling water that has a splash of olive oil. Pour water over couscous let sit about 15 minutes fluff with fork.
